Got to agree with Gert here, just opening up the regular "all-day-applications" like Mail, Chrome (with half a dozen tabs), iCal, iTunes and Aperture sets me back over 4 GB.
Couple that with my virtual machine at 3GB and then I start longing for 16GB in my MBP…
