Logic Environments Help

Hey guys,

I'm quite new to Logic and I have spent the last couple of days getting 
my head around the environments.
Any logic users who are comfortable with creating environments please 
read on and see if you can help.

I am trying to configure a custom midi routing setup for my Doepfer 
MCV24 ( midi2cv box) which controls my analogue synths.

Here is how it's setup on the MCV24

Midi Channel 1:
Roland SH5
CC#11: VCF in

Midi Channel 2:
SCI Pro One
CC#11: VCF in


Midi Channel 3:
Moog Voyager
CC#07: Pan
CC#10: Volume
CC#11: VCF in
CC#12: Wave
CC#13: LFO rate
CC#14: S&H
etc....

And some others on the other channels.

How can I make an environment so it shows up in the drop down menu as 
External Midi Instruments with the proper name and controls?
