Teensy 3.1

Maybe someone could help ...
I was dreaming( sometimes it happens :)  about an usb interface of 11 rows
* 11 columns of knobs  ( 121 potential meters).

I know it s possible with arduino to build a  small usb interface (in
general  5 analogue Maximum if i recall good but I heard  about  a board or
two which can do more analogues inputs ).
 However Arduino don t have enough Analogue inputs  for 121 Potential
meters ...
Maybe someone with more experience can advice if this dream is doable ?
