I haven't tried it but:
1 sec audio = 44100 * 16 = 705600 bits = 88200 bytes
8 tracks    = 88200 * 8  = 705600 bytes/second
705600 / 1024 = 689kB/s

From Wikipedia: sustained write speed for a class 2 SDHC card (the slowest available) is 2MB/s so you should be fine even with 100% overhead for protocol.  I'm sure someone will be quick to point out if my maths are off (which they might well be).
