there is a Max object called fiddle~ by (Max inventor) Miller Puckette that allows you to do pitch tracking -- on monophonic signals. it generates frequency data.
for something as complex as a guitarchord or worse, you might need to dig into FFT, but it is feasable.
A friend created a piece with Max where he analyses songs, chops them into pieces, assorted by fundamental key and lays them out on a sampler keyboard. We then play something with these samples. Very dirty, gritty and not very precise (sometimes the fundamental is right, but the rest of the chord interferes with the rest of what's playing). But fun. And shows that it's possible, even in Live...;) (his patch takes time to analyse the audio offline beforehand, though.)
