there is a very interesting app for everyone using Max/MSP:

We spoke to the developer and they said an iPad version is in the works.

Essentially it's an app that connects to MaxMSP directly, without using OSC. You can create Max-objects on the iPhone via scripting in Max. If you look at the (free) Max objects, you will get the idea.
