I think you are quite right. But some synths still sound different than others, even with a subtractive model. 

on the other hand, there are many many more ways to create sound than with analog(sounding) oscillators and filters.

Wavetables are a popular approach, but I think stuff like additive and FM synthesis, modeling or stuff like Karpluss-strong as well as granular synthesis still have a lot of potential. 

Then of course there is the combination of all of these, maybe throw in a bit of spectral nastiness (FFT re/synthesis for example) and wild and expressive live control of significant parameters, so adjusted that the sound still works the way you want (because with FM and others it's easy to completely destroy a harmony by turning one button just one notch)

they are just a lot harder to use, therefore less popular -- but that also means less used-to-death.

Some of these rely on samples (FFT, granular) and seem extremely interesting to me, part of the reason why I think samplers (Octatrack) are going to make a comeback.
