Ok, my turn to send a reciepe.
It's based on the Delia smith version in her 'how to cheat at cooking'.
It's a spanish sauce called salsa brava, you can make it as spicey as you like.
You'll need
400G jar of mayonaise (Hellmann's works well)
4 tea spoons of paprika
2 tea spoons of cayenna pepper
1 tea spoon sea salt, un crushed
4 - 6 cloves of garlic (dependent on taste)
- first put the salt into a small bowl and peel the garlic cloves.
- Cut (roughly, not fine) the garlic and put them in the bowl with the sea salt.
- Using the back of a spoon (or a pestle and mortar if you have them)
crush the garlic on the bowl. The salt helps break up the garlic. Keep
going until it's well mashed.
- Take a couple of tea spoons of mayo out of the jar
- Put the paprika, cayenne and garlic into the jar of mayo
- Stir well, when it's almost done, add back in the mayo you took out
(it's easier to stir with the space)
- keep stirring until you've got a jar of orange coloured, very
garlicy mayonaise.
- chill
Works best with tapas, a selection of meats, bread and olives. or
just to dip your chips in.
Adjust the amount of cayenne and garlic to suit.
