Fermented foods comprise a good portion of my diet. 

I am getting really interested in making all kinds of quick pickles, and I am crazy for the long haul varieties, especially Rick's (a local NY pickler) "Wasabeans" (Wasabi Stringbeans) and "Phat Beets".
