I'm with Jay on this.
Something modular is a good way to 'learn' and 'understand' subtractive
synthesis.
By getting a few more modules you can also then dive into FM, PM and these
days things like wavetable synthesis too.

Failing that, something really simple, like an SH01 can be a great place to
learn.
