Why are you sad? imo the iOS system is the best for the simple reason of the app store. It's a mature platform with tons of great apps, no other mobile marketplace comes close.

Beatmaker2 is probably one of the most refined music making systems on iOS but it's heavily sample based so that may not be up you alley. But one really cool thing is it supports the paste board, so you can say record a note or a sequence in say ims20 and c/p it into the samplers (pad or key) in beatmaker2 for further tweaking and sequencing, all on the phone btw just switch between running apps.

I think GarageBand is pretty sweet, it may be a little more basic in terms of synth tweaking options but it makes up for it in UI and ease of use.

Sunvox is one I like quite a bit (originally created on palm) it's a tracker with synth engines that you create in a modular fashion. I think you might like to try this the most as it's inexpensive, very geeky and gives great results.

My 4s is coming today so very excited about paring it with my iPad for a little iOS setup.
